The first time I did Whole30 a number of years ago, I came to a realization: I am obsessed with dips and dressings. Give me a bland piece of chicken breast with a helping of delicious, healthy sauce and I am a HAPPY CAMPER.
Seriously I could drink the stuff.
So when I saw this recipe from pinch of Yum for 5 Minute Magic Green SauceI knew I had to do my own twist on it.
My version of this green goddess-inspired dressing packs a bit more punch with the addition of green onion and garlic and has a stronger cilantro flavor which I was craving with the original version.
Oh, and did I mention the jalapeño? Yah that adds some bomb flavor too.
And as for the method, well just blitz your ingredients in a food processor and then stream in oil and water. Easy peasy!
It’s so delicious for anything from salads, to a dip for a crudite platter, to a light spread on a cracker with some goat cheese.
It’s packed with so many healthy ingredients—all blended up and bursting with flavor.

Healthy Green Salad Dressing
It’s so good you’ll want to smother it on everything!
Ingredients
1 bunch of cilantro, washed & pat dry
5 scallions
1 clove garlic
1/2c mayo
2T red wine vinegar
1/2c pistachio
1/2 jalapeno, seeded
1/2t salt
1/2c oil
ice water
Instructions
Combine cilantro, scallions, garlic, mayo, red wine vinegar, pistachios, jalapeño, and salt in a food processor. Bitz for about 30 seoconds, until all of the ingredients are grainy.
With the food processor running, slowly stream in 1/2c oil and scrape down the sides of the bowl.
With the food processor running, slowly stream in a little bit of cold water at a time until your desired consistency is reached. You can make it as thick or drizzly as you like.
